Olive and Peach

Sweetly broiled grapefruit

1 grapefruit serves two people

Ingredients
  • 1 grapefruit ( I prefer to use ruby red but other varieties will work as well)

  • 1 tablespoon brown sugar or honey

  • sprinkle of cinnamon

  • 1 cup cup yogurt per person ( I suggest using plain as the grapefruit will be so sweet already, but you could chose a flavor if you prefer)

  • mint for garnish


Directions

Preheat the broiler at 375° or to the HI setting

Halve the grapefruits with a sharp knife so that the surfaces are smooth without too much damaged pulp. Remove seeds. Using a small paring knife, work around each triangular segment, freeing the pulp from its pith so as to facilitate easy removal of each bite after cooking. Place both halves in a small baking pan or dish. Sprinkle the surfaces with the sugar or honey and cinnamon. Place the pan of fruit under the broiler for about ten minutes, or until the topping is caramelized and bubbling.

Distribute yogurt to individual bowls.

Remove and let cool slightly. Then using a spoon, remove each individual segment and distribute them over yogurt in each bowl. Sprinkle with a bit more cinnamon, place a few mint leaves in each bowl and serve. If this is being served as a dessert, the segments can also be poured over vanilla ice cream for a refreshing and delicious end to your meal.
