Olive and Peach

Honey-Orange-Mint Salad

I had a dessert similar to this at a beach-side restaurant in St. Bart’s. When I returned home, I could not stop thinking of its refreshing taste. This is a great dessert that also happens to be fat free and so easy.


Ingredients
  • 4 peeled oranges

  • 1/2 cup chiffon-cut fresh mint

  • 1/2 tsp cinnamon

  • 1 tbsp honey


Directions

Slice the oranges horizontally so they are in a circular shape. In a medium bowl, toss the oranges with the remaining ingredients. Garnish each serving with a mint leaf.
