Citrus cumin vinaigrette
Tired of your same old salad dressing? Try this new, tangy version that is packed with vitamin and powerful antioxidants.
Ingredients
1 tsp. cumin seeds
1/2 cup freshly squeezed orange juice
1 tbsp freshly squeezed lemon juice
1 tbsp freshly squeezed lime juice
1 tbsp Honey
2 tsp Dijon mustard
freshly ground pepper and coarse salt
Directions
Toast the cumin seeds in a small skillet over medium-high heat until they become fragrant, this should take about 2 minutes. Remove from heat and let cool just slightly. Place them in the bowl of a mortar and work with pestle until finely ground (this can also be done using an automatic spice grinder). Combine all ingredients in blender and blend until smooth. Store, covered for up to three days.
This is great on any salad but my favorite is baby spinach, thinly sliced purple onions, a soft local goat cheese, walnuts and sections of a ripe juicy orange. Mmmmmmmm!
