Olive and Peach

Chewy Gingerbread Cookies


Ingredients
  • 3 3/4 cups all-purpose flour

  • 1 1/2 tsp soda

  • 3 tsp ground ginger

  • 1/2 tsp cinnamon

  • 1/4 tsp ground cloves

  • 1/4 tsp salt

  • Raw sugar

  • 2 tsp cider vinegar

  • 2 well beaten eggs

  • 1/2 cup molasses*

  • 2 cups sugar

  • 12 tbsp. unsalted butter


Directions

Preheat oven to 325 F.

In a large mixing bowl, mix sugar and butter until creamy. Add eggs, molasses, and vinegar. Mix well.

In a medium bowl, sift together flour, soda, ginger, cinnamon, cloves, and salt.

Add dry ingredients to sugar mixture. Stir just until blended.

Form dough into 3â?„4 inch balls and place on a greased cookie sheet. Sprinkle each cookie with raw sugar. Bake for 12-14 minutes. Let cool on a cookie rack.
