Spaghetti with Olive Oil, Garlic, and Hot Red Pepper
This is a classic Italian recipe. Its beauty is in its simplicity. There is no need to add herbs or cheese, let these ingredients speak for themselves.
Ingredients
1 pound dried spaghetti
1/2 cup good quality, extra-virgin olive oil
5 garlic cloves, thinly sliced
1 teaspoon crushed red pepper
Directions
Bring a large pot of salted water to boil. Add spaghetti and cook according to package directions. Be sure not to overcook. The pasta should be al dente, or tender to the bite.
Meanwhile, heat olive oil and garlic in a large saute pan over low heat. Cook for 1-2 minutes. Add red pepper and saute for another minute. Add cooked, drained spaghetti to the pan and mix well. Taste for spiciness and add more red pepper if needed. Serve immediately.
