Olive and Peach

Quinoa Croquettes

These are fantastic as a whole meal adorned with salad greens or roasted vegetables. They also make an excellent side dish for fish.

Serves 4

Ingredients
  • 1 cup quinoa, rinsed

  • 1 cup rolled oats

  • 1/4 tsp sea salt

  • 3 cups water

  • oil to brush the pan


Directions

Place all ingredients in a saucepan and cover. Bring to a boil then reduce the heat to low. Simmer for about 30 minutes. Turn heat off and let sit until completely cool. Remove the grains from saucepan and form them into a log on your work surface. Cut into 1/2 slices and fry in a lightly oiled pan on both sides until golden brown. Serve with desired topping. We suggest diced tomatoes with basil and olive oil or fresh slices of avocado and a sprinkle of salt. Be creative!
