Garbanzo Bean and Corn Salad


Ingredients
  • 2 cups cooked garbanzo beans, room temperature

  • 2 cups cooked corn, room temperature

  • 3 Tbsp extra virgin olive oil

  • 1 Tbsp vinegar

  • Salt and pepper


Directions

Mix all ingredients together. Be as creative or as simple as you choose. Sometimes we eat this dish solo, other times we might mix it with field greens, or add some avocado, tomato, and feta cheese. Another variation can be to add raisins and use Braggs Amino Acids instead of vinegar, in this case you don’t need salt and even a teaspoon of honey can be deliciious. For a quick fix, use canned garbanzos and corn.
