Strawberry Shortcake
Ingredients
2 cups flour
2 tbsp sugar
3 tsp baking powder
1 tsp salt
1/3 cup butter
1 cup milk
1 quart strawberries, stemmed and sliced in half
1 cup sugar
Directions
Preheat oven to 450 F. Grease a round 8 1 1/2 inch cake pan.
In a medium bowl, mix strawberries and 1 cup sugar. Set aside.
Mix flour, 2 T. sugar, baking powder, and salt. Cut in butter until it makes a fine meal. Stir in milk until blended. Pour mixture into cake pan. Bake 15-20 minutes, or until golden brown.
While still warm, split cake in half horizontally so that it makes two thin layers. Fill with berries and top with whipped cream or vanilla ice cream.
